This recipe contains only 7 ingredients that are so easy to prepare, you could almost make this dish with your eyes closed (but please do not try this!). The main ingredients in this are eggs and spinach, which do wonders to your body. Eggs contain good levels of selenium, vitamin D, B6, B12 and minerals such as zinc and iron. A lot of cereal is fortified with these sorts of ingredients, but trust us, it’s better to get your vitamins and minerals from healthier food sources.

Like eggs, spinach also contains iron, but also vitamins A, B2, C and K and magnesium, manganese, folate, calcium and potassium. Phew! That was a long list! These vitamins and minerals are so important to keep our body functioning properly and can really help prevent some diseases that are developed later in life.

In our opinion, just eggs and spinach is a bit of a plain meal. So we’ve ramped up the flavor with garlic, onion and if you’re brave, some red chilli powder! Those flavors are definitely worth getting up for in the morning!

If you’re a new reader, you may have panicked at the word “fat”, but trust us, these are healthy fats. These are essential for maintaining muscle and protecting your heart.

In a pan, melt 2 tablespoons of your butter, and add in your Garlic, Onion Salt, Chilli Powder, Salt and your Spinach. Stir the spinach around in the butter until it is wilted.

In a separate pan, melt the remaining tablespoon of butter and crack in your eggs. You want to fry them for about 4 minutes until they are white and solid. Then you flip the egg over so the yolk is facing down, and fry for a further minute. Don't fry too long or you will lose your nice runny yoke.

There you have it! Serve your eggs up on a plate next to your tasty wilted spinach. A super easy keto breakfast that you can throw together in less than 10 minutes. Add some bacon on the side if you want to boost your fat and protein.
