Secondly, I bake rather than fry, which means you never even go near any unhealthy fats. And finally, these little beauties are so much easier and safer to make. As there’s no hot oil, there’s less of a chance of burning your skin. Plus, there’s no chance of you ever ending up with soggy chicken that has absorbed more oil than it should have done.

  1. Cut cilantro and green onion and set aside
  2. Cut chicken breasts into strips and use 1 tbsp coconut oil and brown chicken with salt and pepper and 1tsp soy sauce.
  3. Drain and rinse noodles in cold water.
  4. In the pan , you cooked the chicken add 4tbsp coconut oil, 1 tbsp sesame oil, 1tbsp garlic, 1 tbsp ginger, 1tbsp stevia, 1tsp sambal oelek or chili paste and cook until garlic and ginger are fragrant. Add noodles and chicken, cook until noodles are warm, add fresh cilantro and green onion!

Tuesday = Taco Salad Day!

Ok, any day is worthy of being graced with tacos, but Taco Salad Tuesday has a much better ring to it. If you’re not sure what tacos are, let me explain. They are a traditional dish from Mexico, made from a tortilla (usually corn or wheat) which gets rolled around a selection of fillings. The usual fillings include proteins, such as beef or chicken, and a variety of vegetables. Finishing touches include topping with cheese for an extra sharp taste. Most people choose to eat them with their hands and they are great when dunked in dips such as salsa and guacamole.

This recipe, i.e. The Best Keto Taco Salad recipe in the World, is a new take on this traditional dish, as it forgoes the tortilla. This makes it perfect for anyone not wanting to include carbohydrates in their diet (e.g. Atkins & Keto dieters) without losing the flavor. Nachos have to one of the best sharing dishes on the planet. They gooey cheese spread over the crisp, salty chips are enough to get anyone’s mouth drooling. They’re also incredibly versatile. Unfortunately, however, these are off limits to those on a keto or Atkins diet. The chips are full of carbohydrates, which is essentially is the most important part of nachos. But what if we told you that you can have your cake and eat it too? Meaning you can still be on a diet and eat nachos. Don’t believe us? Instead of chips, we have found habanero chicharrones to be a wonderful substitute. If you’re unfamiliar with them, they are just pork rinds that have been fried for an extra delicious taste. They still bring the salty flavor that you would get from a chip, but because they are fried, they also bring the perfect amount of crunch to the dish. We have also used ghee, which is a type of butter from India. It contains a little spice, which gives it extra flavor but feel free to use regular butter of oil instead.

Our toppings include Ragu Double Cheddar sauce along with HEB White Queso with Sausage. If you’re vegetarian, however, you’re welcome to substitute the latter for Blanco. Finish with oh-so-delicious Dried Cilantro Chili Garlic Cholula and some black pepper. Just to note, if you’re after even more of a kick, add a little cayenne pepper as well.

Recipe Information

This recipe has the most amazing aroma, vibrant colors and glorious taste. To start off, it’s best to use chicken thighs, rather than breast. They actually contain more flavor than the breast, and as a bonus, are actually cheaper too. The next steps involve making a simple marinade out of chili powder, lemon juice, and salt and then leaving it to marinate for at least 30 minutes.

Whilst the meat is resting, another marinade is made out of ingredients such as Greek yogurt and garlic, which you’ll need to rub into the chicken once it’s finished resting. The chicken then needs to sit in the fridge for at least 3-4 hours. If it’s flavor you’re after, this is definitely the most vital step, because it’s only time that will help the chicken absorb all those yummy tastes. Nutritional Information

This recipe has a higher number of calories than the other recipes on the site, coming in at 542 cals. This is mostly due to the additional fat found in the chicken thighs, but it’s still a perfectly healthy dish. It only contains 1 gram of sugar and only 6 grams of net carbs, which is fantastic. The 37 grams of protein make it a great meal for having at lunchtime as well. We recommend actually making this on a Sunday and taking it to work throughout the week.
