Ever been stuck deciding between cheesecake and actual cake? Well, now you never have to choose again! Here’s the best mini keto cheesecakes recipe, that combines both of those lovely sweet treats. It even creates a brand new flavor that you’ll never be able to turn your back on again.

The main ingredients are almonds and pecans, which we blended down in a food processor. If you don’t own one of these machines, don’t panic. You can also blend them, or make it really easy for yourself and just buy ground almonds at the local store. The other additional ingredients include butter, a brown sugar substitute (any make will do) and one large egg. So nothing too complex!

The cream cheese topping is also perfect. We’ve mixed ours with sour cream, which gives the mixture a lighter texture but also adds a nice kick in flavor. Make sure you only use full-fat cream cheese though. Ones that are “low calorie” or “light” can cause the mixture to split and make it horribly runny. The same goes for the cream – heavy whipping cream is usually best.

These little cakes are absolutely perfect for taking to a party or gathering. They are gluten-free, which means they will satisfy anyone who has intolerances and since they lack carbohydrates, they are perfect for serving to anybody watching their weight, or those on a keto or Atkins diet. Recipe Information

If you’re a keto lover, it’s likely you’ll have all of the ingredients in your kitchen cupboards. If you’re a beginner, though, don’t worry! All of the ingredients listed will be available in your local store.

So, let’s start with the basics.

In order get the deliciously rich, chocolatey flavor, you need 1/4 a cup of cacao powder,  1/2 a bar of cacao unsweetened chocolate (a bar described as “baking cacao” is particularly good) and 1/4 cup of cacao nibs. The reason cacao is better than cocoa, is that it contains only raw cocoa beans. Usually, to make cocoa powder, the beans are roasted before being transformed into a powder. However, with cacao, it just means the beans haven’t been roasted and so the flavor you get is stronger and utterly unbelievable!

In this recipe, ordinary flour replaces almond flour, which means every single muffin is gluten-free! Eggs, butter, sour cream and avocado bind this recipe together, which might sound a little strange to be putting in a muffin! But trust us, you won’t taste these ingredients due to the lovely chocolate flavor and they really help make the muffins extra moist. Final ingredients include vanilla, salt and a sweetener of your choice.

Finally, coming home to something delicious after a long, tiring day at work, helps us unwind and relax, completely taking us out of a sometimes “frazzled” frame of mind.

So, if you’re after all three of these amazing food benefits, this recipe is perfect for you. These delicious little squares of nutty deliciousness are perfect for taking to a family gathering on a Summer’s afternoon. Instructions

Chocolate
1. Measure coconut oil. If oil is hard, I press it down as I add it to the measuring cup. That way by the time the cup is full there are no air pockets. (Go on, use your hand if you have to!)
2. In a double boiler or in a bowl (glass or stainless steel) over a pan of water, melt coconut oil over medium-low heat. Do not let the bottom of bowl touch the water in the pan.
3. While oil is melting, measure out cocoa and sweetener.
4. In a bowl, combine the two and mix well.
5. Once oil is melted, remove from heat and add sweetener/cocoa mix. Stir well until thoroughly combined.

Coconut Base + Putting it together
1. Melt the coconut oil and butter.
2. In a medium bowl, combine the coconut flakes, melted butter, and coconut oil.
3. Add 1 tsp of vanilla and mix.
4. Sprinkle the mixture with the powdered Swerve sweetener and mix it again.
5. Layer a piece of parchment paper in the bottom of a square pan.
6. Pour the coconut mixture into the pan and place in the freezer for about 5-7 minutes.
7. Remove the coconut mixture from the freezer and spread the almonds evenly on the top of the coconut base.
8. Pour the melted chocolate on top of the coconut, spreading evenly.
9. Place the mixture back in the freezer for about 10-20 minutes until it has completely set.
10. Use a sharp knife to cut the squares.

The Best Lemon Keto Cheesecake Recipe

It’s a hot Summer’s day. You’ve had a delicious alfresco meal and you’re finishing the contents of a cold drink melting in your hand. Sound perfect? Well it’s about to get better. Because once you’ve finished that drink, you can treat yourself to a dessert made from the best lemon keto cheesecake recipe around. Yes, that’s right. Now you can have dessert, even if you’re on a diet!

Lemon cheesecake is the best classic dessert that every guest loves. I mean, who hasn’t heard this conversation after a dinner party:

Host: “Would you like some dessert?”

Guest: “Hmm. I don’t know. I’m rather full. What are you offering?”

Host: “Lemon cheesecake.”

Guest: “Oh, go on then!”

But what’s great about this recipe, is that it’s a lemon keto cheesecake. This means it will satisfy every health-conscious guest and can even be decorated to serve as a finishing dinner party centerpiece! The coconut and almond flour also make this recipe gluten-free, which is helpful with the growing number of people experiencing dietary intolerances. If you’re after a sweeter taste, use 100g of mascarpone. However, if you’re after a bit more of a “kick”, sour cream is a good alternative. Remember, though, always use full-fat cream cheese. Using low-fat cream cheese splits the filling and you’ll be disappointed with the result. Trust us, nothing is worse than seeing that your hard work has gone to waste!

If possible, try and use the best quality lemons you can find for the ultimate tang. Since the lemons are sweetened, however, you don’t need to worry about this too much. If you’re feeling confident, you can even try adding a small squeeze of lime juice, which will help compliment the flavors.

Read on to learn how to make this heavenly keto dessert.

Recipe

For the base – preheat the oven (180c in the UK) and line a medium tin with greaseproof baking paper. Add up 120g of melted butter, 3/4 cup of almond flour, 1/4 of coconut flour, a pinch of salt, 4 tablespoons of sweetener to taste, along with a pinch of cinnamon. Mix until it’s sticky enough to pat down in a tin. Add more butter if needed. Bake for 10 mins and then take out the oven to cool (keep the oven on).

For the mixture – Mix 450g cream cheese, 100g mascarpone or sour cream, 4 eggs, 3/4 cup of powdered sugar alternative, 1tsp vanilla. Add juice and zest of two lemons, then sweeten to taste. Once the base has cooled, line the tin with aluminum foil and place in a bigger tin. This is to add water in the big tin up until halfway of the cheesecake tin. Add the cheese mix on top and cover with foil. Bake for 90mins or uncover during the last 15mins to get a brown crust.
