    The Best Mini Keto Cheesecakes

    Ever been stuck deciding between cheesecake and actual cake? Well, now you never have to choose again! Here’s the best mini keto cheesecakes recipe, that combines both of those lovely sweet treats. It even creates a brand new flavor that you’ll never be able to turn your back on again.

    The main ingredients are almonds and pecans, which we blended down in a food processor. If you don’t own one of these machines, don’t panic. You can also blend them, or make it really easy for yourself and just buy ground almonds at the local store. The other additional ingredients include butter, a brown sugar substitute (any make will do) and one large egg. So nothing too complex!

    The cream cheese topping is also perfect. We’ve mixed ours with sour cream, which gives the mixture a lighter texture but also adds a nice kick in flavor. Make sure you only use full-fat cream cheese though. Ones that are “low calorie” or “light” can cause the mixture to split and make it horribly runny. The same goes for the cream – heavy whipping cream is usually best.

    These little cakes are absolutely perfect for taking to a party or gathering. They are gluten-free, which means they will satisfy anyone who has intolerances and since they lack carbohydrates, they are perfect for serving to anybody watching their weight, or those on a keto or Atkins diet. If baked to perfection, they are even elegant enough to serve at an appetizer style dinner party. Try adding berries, such as raspberries or strawberries for that extra finishing touch. Just be sure to make as many as possible, though. These babies are sure to fly off the serving trays as quickly as they’ve arrived in the room!

    Pre Heat Oven To 300 degrees

    Process 3oz (1/2 cup approx) Almonds and 3oz (1/2 cup approx) Pecans in food processor or blender until ground, mix in 1 tbsp Brown Sugar substitute and melted butter. Spoon evenly into 12 lined muffin tins.

    Blend 8oz package of softened Cream Cheese with 4tbsp Pyure (or low carb equivalent) Add 1 egg, 3 tbsp Heavy Cream, 3 tbsp Sour Cream and blend till mixed. Spoon evenly muffin tins

    Bake 300 - 50-60 mins until tops are golden.
