And with that in mind, we think we’ve discovered the best pepper jack, mozzarella, spinach and egg keto muffins recipe, so you’ll never go back to your old habits.

Trust us, don’t be fooled by these dinky keto muffins. They come in at 95 calories, which is perfect for anyone watching their weight and trying to maintain a low-calorie diet. They also have a whopping 8 grams of protein, which means you’ll stay full all throughout the morning and not reach for a mid-morning snack. Finally, they only have 1 gram of carbohydrates. One gram! Preheat oven to 375deg F

Pour olive oil into frying pan over medium heat and fry spinach until wilted

In a large bowl, combine eggs, spinach, pepper jack cheese, and spices

Wisk everything together well

Spray a 12 count muffin tin with non-stick spray

Evenly pour mixture into each muffin tin

Add chopped green onion and mozzarella to the top of each muffin

Place in oven and check after ~10 minutes, could take a little longer. I usually pull them out when they've slightly browned and wiggle as a whole when the tin is shaken. They will rise quite a bit when cooking but will settle after taken out.

I'll usually store them in the fridge and eat two each morning for breakfast. Microwave them for 1 min. They get pretty watery if frozen and reheated.
