While these are not completely zero carb muffins, each muffin only has 2.7 grams of net carbs, which means it fits in perfectly with any Ketogenic or Atkins style diet. Step 2Set aside 5 large blueberries and cut the in half, set these aside. Cut the remaining blueberries into quarters. |

Step 3Using a hand mixer, thoroughly combine eggs, mayonnaise, blueberry quarters and vanilla extract. Set aside. |

Step 4In a separate bowl combine the almond flour, Swerve, salt and baking powder. |

Step 5Thoroughly combine the wet and dry ingredients, use hand mixer if necessary. The batter will be thicker than normal muffin batter, this is normal. |

Step 6Spoon 1/4 cup of the batter into 10 muffin liners (using a measuring cup greased with coconut oil for easy transfer). |

I have tried substituting with sour cream and Greek yogurt and the muffins come out dry, dense and hard to swallow. Don’t be afraid of the mayo (it’s basically just eggs, vinegar and lemon juice anyway). |

Made these twice with raspberries. Great for Keto!
These would be amazing if they came out of the pan! I would reduce the mayonnaise-as I could discern the flavor, but they are flavorful and moist as described, but they came out in pieces which is not acceptable for serving.
