4 Chicken Thighs Skin On (can sub Pork, I like Country- Style Bone In)
1/2 Tbsp Sugar Substitute
1 Ginger Root
1/4 Onion
2 Tbsp Fish Sauce
1 Quart Chick Stock (can sub beef stock, I like that with pork version)
2 cups Water
2 Bags Better Than Noodles
Garnish Options:
Cilantro
Green Onion
Lime
Fresh Jalapeno
Fried Garlic (Can be found at Asian Stores)
Soy Sauce or Golden Mountain Sauce
Sugar Substitute
Black Pepper
Fish Sauce

    Peel ginger and cut into large chunks, Roughly cut onion into chunks, cook in soup pot high heat until they start to show sear marks.

    Add 1 Quart (one full box) Chicken Stock, 2 Cups Water, 1/2 Tbsp Sugar Substitute, 2Tbsp Fish Sauce, 4 Chicken Thighs, Reduce heat and simmer until chicken is tender, Approx 1 hr.

    Remove chicken and discard ginger root chunks, Let chicken cool until you can shred it. You can discard the skin or shred it to up the fat. Return shredded chicken to soup.

    Prepare shirataki noodles per package directions.
